Beneath a nondescript doorway in the upper Marais, a stone staircase descends into a vaulted cave that predates the buildings above it by three centuries. This is where Olivier — a former sommelier at L'Arpège — now runs the most intimate Champagne tasting in Paris.
Six grower Champagnes, no négociant houses, no Moët. Each pour comes with a story about the family who made it, the soil it grew in, and why Olivier chose it. The cave seats twelve. The light is candlelit. The acoustics make every pop of a cork sound like an event.

The Booking
Book at least one week ahead via email — there's no website and no app. Olivier responds personally, usually within a day.
The Timing
The 6pm session is the best — you emerge into the Marais at golden hour with a buzz and an appetite. Walk to Breizh Café for buckwheat galettes after.
The Pour
Ask about the Blanc de Noirs from Aÿ — it's not always on the tasting, but if he has it open, it's the best glass of Champagne you'll have in Paris.
The Souvenir
Olivier sells bottles at cave prices — significantly below retail. Buy the one you liked best and drink it at home remembering the cave.
